Lee's Go-To Iced AeroPress Recipe

Lee had the honour of roasting for the Canadian AeroPress Championship in 2022, and as he was scrolling through the AeroPress website, he realized they had all the winning recipes available online and naturally, he went through them all!
"I wanted a strong iced recipe for the summer time since I often sit outside while answering emails, and ice melts quickly here in Ontario! The recipe I ended up on was Paulina Miczka’s winning one from 2017, but instead of diluting the brew with water, I brew over ice. This recipe brews strong but you don’t lose any complexity or clarity, making for a beautiful iced coffee!"

The Recipe: 

Put 35g of coffee into your AeroPress, shake to level.

Add 160g-200g of ice to your carafe.
From 0:00 to 0:15, add 150g of water.
From 0:15 to 0:35, stir and keep stirring.
At 0:35, attach filter cap with a pre-wet filter in place (Lee suggests to use two filters for extra clarity!).
At 1:05, flip the AeroPress onto the carafe, and start pressing.
At 1:35, stop pressing. You should now have 90ml of the concentrated brew (about 4.5% TDS).
Whereas Paulina suggests adding 160g-200g of hot water to the brew, I let the melting ice make up the ratio difference!
