INDIA - Mooleh Manay Excelsa (84H Yeast Fermented Natural) – Coffee Wallas

Mooleh Manay Estate is a 75-acre farm in Nakoor Village, Coorg, Karnataka, managed by Komal and Akshay Dashrath. We've worked with Komal and Akshay from South India Coffee Company (SICC) for a couple years now, where they take a data-driven approach to coffee farming and processing. They work with a lot of farms and coffee species to produce some delicious lots, including this less commonly cultivated Excelsa species. 

This Excelsa lot is naturally processed with an 84-hour yeast inoculated fermentation. Ripe cherries are hand-picked and water-sorted before being fermented in sealed drums with a custom culture. The cherries are then slowly dried on raised beds inside a polyhouse, with regular turning and careful moisture monitoring to preserve their distinctive fruit character.

This lot showcases its naturally vibrant character with notes of tamarind, red currant, and black tea.
