Hiyori Coffee is what happens when two self-described "AeroPress nerds" from Japan set up shop in Vancouver. Founded by husband-and-wife team Shinya and Eri, Hiyori started as a series of pop-ups that quickly built a loyal following. In 2025, they finally planted roots with a permanent café in Mount Pleasant. Their approach is defined by a quiet precision and intentionality, where every variable is considered and nothing is wasted. It’s a beautiful marriage of technical dedication and West Coast café culture.
