Led by Ryan Walker, Manager of Coffee Production, whose love for food, drink, and craftsmanship drew him into specialty coffee over a decade ago. After co-founding a small roastery as a hobby, Ryan launched Birdy with the vision of offering something different—lighter, more expressive Nordic-style roasts in a region where darker profiles were the norm. The name “Birdy” was chosen intentionally to reflect a softer, more approachable identity, inspired by Ryan’s family’s simple joy of birdwatching. Now five years in, Birdy Coffee Co. has become not only a space for unique roasting but also a tight-knit team effort.
