Founded by husband-and-wife team Shinya and Eri, Hiyori started as a series of pop-ups that quickly built a cult following. In 2025, they finally planted roots with a permanent café in Mount Pleasant. The approach is unmistakably Japanese: precise, intentional, nothing wasted.
