CHINA - Gao Estate K72 Double Washed – Coffee Wallas
Description
The Gao family are the pioneers of growing coffee in China; their family planted one of the earliest coffee trees in Yunnan in the 1950’s. For years, they’ve produced an enormous volume of coffee for global brands. It was only until 2018, the same year that I had my very first specialty grade Chinese coffee, that they won the Menglian Specialty Coffee Gold Award. Since then, they’ve only gotten more serious about growing specialty coffee in Yunnan. Gao is one of the earliest coffee producers in China to adopt modern and digital agricultural methods, including soil testing, organic and targeted fertilization, drone-based pest control, and biological varietal management.
When we received this coffee, I was surprised with the combination of this coffee’s variety and processing method. This coffee went through a Kenyan-inspired washed process, named K72. After the farmers selected the ripest cherries, they pulped them and placed the seeds under a multi-stage, 72-hour submerged fermentation in clean, temperature-controlled water. Because of the extendedmulti-stage soaking and washing cycle, the producers were able to offset traditional woody notes that come from the Catimor variety. As a varietal with some Robusta genetics and traits, the processing redefines the expression of Catimor by applying the K72 process, resulting in a high-definition cup that comes with a good balance between the plum character and rock sugar.
