BREW GUIDE

Brewing tips from the roaster:

Brewer: Kalita Wave, or other flat-bottomed brewer (Cone brewers are also good, but the flat bottom brings out the body more).

1:16 ratio, 95°C water, 20g coffee, ground slightly finer than Kosher salt.

Pre-wet the filter, pour out the rinse water, pour the ground coffee into the brewer. Start timer, pour 40g of water on the grounds in concentric circles. Aim to saturate all the grounds with water. Swirl the brewer 2-3 times, this is to mix the water-coffee slurry. Let it bloom for 30-40 seconds, then pour to 140g (100g 1st pour). After it’s drawn down about halfway, pour to 240g (100g 2nd pour). After it’s drawn down about halfway, pour to 320g (80g 3rd pour). Swirl the brewer 2-3 times to settle the grounds. Total brew time is roughly 3-4 minutes but always taste and see. Swirl the brew and enjoy!

2024 Advent - Day 3

Didn't have a flat bottom Brewer to bring out the body, so did a 2-pour + bloom steep and release on my Hario Switch at the recommended 95°C and 6 clicks on my Ode Gen 2.

There is a very pleasant creaminess at first. Fruit notes tasted to me like cranberry: bright, a little acidic, and more tart to me as opposed to juicy/ripe/sweet. These were very much in the background and hiding beyond a mellow profile.

There were good and interesting flavors here, but nothing bold. Washed, Mexican coffees usually taste dull, muted, and like something is missing, but this was one of the better ones I've had.
