We think he has one of the most advanced coffee processing facilities in India (maybe even the world).\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003e\u003c\/span\u003e\u003cspan\u003eMr. Ashok told us that t\u003c\/span\u003ehe Catuai cherries undergo a carefully controlled 54-hour extended anaerobic fermentation natural process, designed to develop greater complexity and enhance the coffee’s natural fruit character. Grown on the block called JERI Patte at 1370 meters above sea level, the Brix of the coffee cherries came in at 25.9 (very high sweetness!). After floater removal in the processing stage, the coffee was sequentially inoculated with a mix of different lab-grown cultures and fermented in bioreactors.
