Ripe cherries are hand-picked and water-sorted before being fermented in sealed drums with a custom culture. The cherries are then slowly dried on raised beds inside a polyhouse, with regular turning and careful moisture monitoring to preserve their distinctive fruit character.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThis lot showcases its naturally vibrant character with notes of t\u003c\/span\u003eamarind, red currant, and black tea.\u003c\/p\u003e\n\u003cp\u003e250g bag.
