He uses his biology background and applies it directly to his fermentation experiments. Turns out, the right microbial activity can make magic—and these experiments are producing cup profiles that people (us included) didn't think were possible with Indian coffee.\u003c\/p\u003e\n\u003cp\u003eThe cultured washed method gives this coffee a beautiful transparency; you can taste the quality of the plum, dark cherry and dried apricot without having \"processing flavour\" get in the way.
